This is a list of Indian dishes. Indian cuisine encompasses a wide variety of regional cuisines native to India. Indian food is also heavily influenced by religious and cultural choices and traditions. This list is only a guide and needs to be expanded.
This is a list of common Indian pickles, which have a wide range of flavours and textures. Indian pickles are generally pickled with oil, vinegar, lemon juice or water.[1] Indian pickles are often made into fresh relish and chutney,[2] which provides additional flavours to food. Many types of foods in Indian cuisine are pickled.[1][3] Mangoes,[3] gooseberries and lemons[3] are examples of foods that are commonly pickled in Indian cuisine. Sometimes Indian families have their own unique pickle and chutney recipes that are handed-down through the generations.[1]
Amla pickle

Amla pickle or Indian gooseberry pickle is a popular pickle in South Asia and India. This spicy pickles are also available commercially. Gooseberries are a source of vitamin C, vitamin A, calcium and phosphorus.[4] It is prepared by pressure cooking them and seasoned with mustard by heating oil. Later adding the gooseberries and all the other ingredients.[5] They can be stored in a refrigerator and used for about 15 days.
Assorted pickle
Assorted pickles also referred as Mixed pickles is also a popular mixed pickle in Indian cuisine. This pickles are also available commercially. It is prepared by boiling all the vegetables and cooking with the marinated ingredients together.[6] 'Pachranga Achar', also a generic name for the category, is popular brand of assorted or mixed pickles in North India, based in Panipat, it has a turnover of over Rs 25-30 crore.[7]
Indian pickle
A dish termed "Indian pickle" may include cabbage, cauliflower, carrot, french beans (green beans), onion, radishes, gherkins, celery, garlic and other foods.[10][11]
If you like Indian food spices such as curry or ginger, you'll love this vegan recipe of mixed carrots, peas and potatoes simmered in a generous amount of aromatic Indian spices. This recipe for curried Indian mixed veggies is both vegetarian and vegan. If you don't happen to have all of the spices on hand, feel free to skip one or two, but anymore than that and you will miss the authentic Indian flavor of this dish.
Heat the oil and margarine over medium heat. Add garlic and all the spices and reduce heat to low. Cook for just one minute, stirring once or twice.
Add onions and sautee for 3 minutes, or until onions turn clear. Add tomatoes, carrots, peas, potatoes, salt and water. Cover your pan and allow to cook for about 20 minutes, or until potatoes are done, stirring occasionally. Serve over rice if desired, and enjoy!
